ANZAC Day at Docklands

To honour our brave diggers this ANZAC Day participating restaurants in the Docklands are offering a FREE meal and beer to all returned servicemen & women when dining with their families.

Ingredients
3-4        Short crust pastry sheets
15g       Garlic
150g     Brown onion
5g         Chili
25g       Coriander
25g       Butter
20g       Feta, crumbled
400g     Diced pumpkin
Salt & Pepper to taste
Tart mould 6cm size

Method
• Dice pumpkin into 2cm cubes & mix with a small amount of oil. Bake in pre heated oven at 180°C, for 15-20 minutes until tender
• Line tart mould with short crust pastry.
• Dice onion and sauté with garlic & butter. Add rest of ingredients (except the feta) to the fry pan including the pumpkin and mix gently. Add salt & pepper to taste. Remove from heat & mix through feta
• Fill the pastry lined moulds with the pumpkin mixture
• Bake in oven at 175°C for 20 minutes until the pastry is cooked

To Serve
Serve with pomegranate jam and salad
