Recipe - Chocolate Rice Pudding
|

Ingredients
Milk, 440ml
Thickened cream, 140ml
Castor sugar, 350g
Orange zest, ¼ of an orange
Vanilla pod, 1
Short grain rice 25g
Corn flour 16g
Milk, 16ml
Chocolate, grated, 8g

Method
• Combine in a saucepan 440ml milk, cream, sugar, orange zest, vanilla pod and rice. Bring to the boil then reduce to a simmer and cook until rice is tender and is thick enough so that it can coat the back of a wooden spoon.
• Mix together corn flour and16ml milk, add to saucepan and cook on low heat for 3-5 minutes until corn flour has cooked through and mixture has a nice thick consistency
• Turn off heat & remove vanilla pod
• Serve in a bowl and sprinkle on grated chocolate
• Pudding can be served either hot or cold
