The MW (Melbourne Woman) lifestyle program will feature BlueFire
on their 'city scene' segment on the first episode of their new
season starting on Sat 2nd July at 5 pm.
Host, Cindy Sargon, will have a chat with BlueFire's head chef Mark
Phillips and take a look at the Churrascaria Grill. The
program will also feature the Docklands Winter Wonderland. |

It's
mushroom mania time with Melbourne restaurants making a special

Tides
Seafood Grill & Oyster Bar in Port Melbourne has a grilled
oyster with mushroom & parsley sabayon. Rivers Restaurant
Cruises are offering prime beef ribs with red wine & mushroom
glaze on a seeded mustard potato mash. BlueFire also has mushrooms
on the menu with an entrée of pan seared scallops on wilted
greens with mushroom, ginger & lemongrass soy.

Pumpkin
and
Chicken Soup |
Ingredients:
1
kg Pumpkin
55 g butter
1 large brown onion, finely chopped
1.7 lit water
or vegetable stock
1 large potato, peeled and chopped
250 g chicken breast
salt & pepper

Method:
Prepare Chicken Breast
• Seal and roast chicken breast. Season with salt
& pepper. Once cooked, shred the chicken and set aside.
Soup
• Trim and peel pumpkin
• Melt butter in large saucepan; add pumpkin, potato, onion
and leave to soften
• Pour in water or stock and bring to the boil
• Simmer until all the vegetables are tender. Using a blender,
blend ingredients to a creamy consistency
• Stir through shredded chicken breast and serve while hot
