| Recipe:
Chunky
Tomato Chutney |
| Great
for summer dips and condiments
Makes
about 600ml
750 grams tomatoes
1 clove garlic
½ onion thinly sliced
½ teaspoon allspice
½ tablespoon ginger
½ teaspoon mustard seeds
¼ teaspoon chilli powder
sea salt to taste
125 ml white wine vinegar
125 grams sugar
|
Method
Chop the tomatoes roughly, crush the garlic and ginger
Add
everything (except the sugar) to a medium sized saucepan
Bring
to the boil and then cover and let simmer for 1 hour
Add
the sugar - stir in well. Simmer for another half hour uncovered.
Transfer
to a clean container to cool then refrigerate in a sealed container
May
be kept for approximately 2 weeks
Ideal for dips, salad dressings and cold meats.
