Special Kids on Christmas Cruise

Rivers would like to extend an extra special welcome to Andrew Thomas and his family who will be enjoying Christmas Day Lunch on our cruise this year as a part of the Starlight Children's Foundation’s Wishgranting program.

New Summer Dinner Cruise Menu

Rivers Restaurant Cruises are celebrating the coming warm summer months with a new Restaurant cruise menu featuring delicious produce from the season.

New dishes include; Smoked salmon terrine with layers of Philadelphia, capers and lemon with cream fraiche dressing on a honeydew base AND Pan fried rockling fillets over semolina gnocchi with chive veloute. To view the full menu visit www.rivers.net.au

Recipe: Tempura prawns on char-grilled zucchini with wild rocket

Ingredients:
Serves 4

20 King Prawns (shelled with heads removed)
1 zucchini
50g wild rocket
20ml olive oil
Vegetable oil (for deep frying)

(Ingredients Batter)
1 egg yolk
1 egg white
60g plain flour
50ml water

Method

• Devein the prawns and dust with flour

• Make the tempura batter by whisking the egg yolk and water together. Add the flour and stir in with a fork. Beat the egg white into a soft peak and fold into the batter.

• Dip the prawns into the batter and cook in a deep fryer (180 deg c) for 2 minutes. Remove and drain on kitchen paper.

• Cut the zucchini into thin strips and char-grill for 1 minute. Season with salt and pepper. Mix the zucchini and wild rocket together and dress with the olive oil.

To assemble

Arrange the salad in the middle of the plate. Place the prawns around the salad and spoon dressing over the prawns.
