We
have two of those recipes below for you to try for yourself.

| Recipe:
Salmon
& Nori Mignons
and Wasabi Mayonnaise |
Salmon
& Nori Mignons
500
grams of fresh Salmon
10 sheets of Nori
200 ml Apple Mirin
2 Limes
50ml Light Soy
1 Bullet Chilli
100ml Vegetable Oil

Method
- Step 1
Cut the salmon into 4cm x 1.5cm strips.
Step 2
Using
a pair of scissors cut the nori sheets 2cm wide.
Step 3
Combine
the juice from 2 limes, soy, mirin and chopped chilli.
Step 4
Marinate
salmon pieces for 2 hours.
Step 5
Lay out strips of nori 6 at a time.
Step 6
Lay a piece of salmon on the nori and wrap / roll
the nori around the salmon.
Step
7
Place in fridge.
Step
8
Heat a heavy based pan, add a little oil, place nori
wrapped salmon in pan cooking and tossing for only 2 minutes.
Step
9
Serve hot with Wasabi mayonnaise.

Wasabi
Mayonnaise
2
Eggs
10 ml Vinegar
1 Teaspoon Wasabi Powder
Salt
Pepper (white)
250ml Vegetable Oil
10ml Boiling Water

Step
1.
Place egg yolks, vinegar, wasabi and seasoning into a bowl and
whisk well. Step
2.
Gradually add oil very slowly, whisking continuously until
all oil is incorporated.
Step
3.
Add boiling water (this stabilizes the mayonnaise).
Step
4.
Adjust seasoning if required.
