Recipe: Soft Centered Chocolate Pudding, Raspberry Sorbet, Whipped Cream

Ingredients

Serves 4

250g Butter
250g Chocolate
5 Eggs
5 Egg yolks
125g Sugar
75g Flour
Raspberry sorbet
200g Cream
Vanilla bean
Icing Sugar

Method

Melt butter with chocolate

• Mix Eggs with Yolks and sugar to form a sabayon, add flour

• Combine both mix and reserve in fridge for 20 minutes

• Fold a mould with silicon paper and fill it with the chocolate mix.

• For the whip cream, cut the vanilla pod in half and take out the inside and put it in a bowl with the cream, and whisk until hard.

• Place the chocolate pudding in the oven for 9 minutes at 180º

• To serve put it in a plate a gently take the silicon paper, finish with raspberry sorbet and whip cream, and sprinkle with icing sugar
