Dinner Cruise - Friday 11th Mar 05 |
With
Grand Prix in town
- Rivers dinner cruises have sold out 2 boats for this Saturday
(5th March). The next available cruise is on Friday 11 March.
One of our luxury vessels will depart from the Docklands at 7.30
pm for a 3 hr cruise along the Yarra. On board you will be served
a 3 course meal, with drinks available to purchase at the bar.

Some Art" at BlueFire |
| The
Contempora
2 - Docklands Festival of Sculpture is on at NewQuay
from 27 Feb - 21 March. The restaurants along NewQuay are getting
into the spirit of the festival by placing a special 'sculptured'
dish on the menu. Posters of these 'works of art' will be displayed
in restaurant windows throughout the festival. So come down to BlueFire
at NewQuay and "eat some art" - Ph: 9670 8008

| Recipe:
Seared Blue Eye Fillet with Crushed Pea, Chive
& Tasmanian Salmon Roe |
Serves
4
100ml thickened cream
400g fresh peas
2 tablespoon chopped fresh basil
Bring
the cream to a boil, add the peas and cook for 5 minutes, add the
basil. Take off the heat, crush the peas with a fork.
¾
cup chicken stock
¼ cup thickened cream
2 tablespoons butter
2 tablespoons chopped chives
2 tablespoons Tasmanian Salmon Roe
Salt and Pepper to taste
In
a saucepan bring the chicken stock to a boil, add the thickened
cream and cook for 3 to 5 mins. Whisk in the butter until totally
incorporated, take off the heat, add the chives and salmon roe.
Keep warm until ready to use.
¼
cup vegetable oil
4 x 220g Blue Eye fillets
Salt and Pepper
Heat
a pan over medium high heat with the oil. Season the Blue Eye Fillet
on both sides. Cook until nicely browned about 3 minutes, turn over
and cook another 3 minutes.
To
Arrange: Spoon the peas on 4 warm dinner plates, top each
with a Blue Eye Fillet. Spoon the sauce around the fish.
