Mothers Day Lunch Cruise with Rivers - Children Eat Free

Recipe: King Prawns on Kipfler potatoes and green beans with a lemon horseradish dressing

Serves 2

8 King Prawns (shelled)
200 g Kipfler Potatoes
100 g Green Beans
½ Bunch Watercress
1tbsp Sherry Vinegar
1 tbsp Lemon Juice
150 ml Olive Oil
½ tbsp Grated horseradish
50ml Vegetable Oil

Step 1
Cook the potatoes in salted water until soft, drain and once cool, peel and slice each potato into 2cm rounds
Step 2
Blanch the beans in boiling salted water for 1 minute and refresh in ice cold water. Drain and slice each bean in half lengthwise
Step 3
To make the dressing, add the lemon juice and sherry vinegar together and slowly whisk in the olive oil. Season with salt and pepper and finish with the grated horseradish
Step 4
Sauté the King Prawns, using the vegetable oil in a hot pan for about 1 minute on one side and 30 seconds on the other
Step 5 – Assemble the dish
Place the potato rounds in a circle in the middle of the plate.
Season the beans and arrange over the top of the potatoes.
Stack the prawns on top of the beans and spoon the dressing over the prawns and around the plate
Dress the watercress with the remaining lemon horseradish dressing and arrange the salad on top of the prawns.

Pan fried Western Australian King Prawns on marinated kipfler potatoes, green beans, with lemon dressing

Orange & poppy seed pudding with a citrus caramel syrup & clotted cream
Pistachio praline & dried fruit parfait with raspberry coulis
