Wharf - The End of an Era |

After
almost 10 years - Rivers Reception Centre will be closing the
doors of its three reception venues located along the South Wharf
precinct in Southbank.
The
State has recently announced plans for a new billion dollar project
to commence at the South Wharf precinct. Development of this site
and surrounding area will include an extension of the exhibition
centre, retail outlets and a hotel. |
Due
to these plans, Rivers Reception Centre (along with the entire
group of sheds along South Wharf) will be closing.
Rivers'
three reception centres will trade until the 2nd January 2007.
After this date, no more functions will ever be held in these
unique waterfront Heritage Buildings at South Wharf. Click

next 6 months will be your last opportunity to hold your next

of Dinner Cruises in Southgate |
Rivers
Restaurant Cruises will be launching a luxurious new dinner cruise
at Southgate. The Lady Lindeman vessel which holds around 80 guests
will be transformed into a full a-la-carte restaurant on the water.
Dinner Cruises will run from Wednesday through to Sunday from
Southgate where diners will be treated to beautiful Melbourne
views, live music and fantastic cuisine.

An exhibition of work by one of the 20th century's
greatest artists, Pablo Picasso will be held at the National
Gallery of Victoria. This ground-breaking exhibition will focus
on the period of Picasso's work between 1935 and 1943, examining
the influence of his mistress, photographer and surrealist artist,
Dora Maar. Picasso met Dora Maar in 1935, and during the years
they spent together Picasso produced some of his greatest work
including the masterpiece Guernica and the NGV's own Weeping

| Recipe:
Double Baked Soufflé of Chive and Scallops |
Makes
15-20 portions using moulds that hold 200-250ml
Ingredients
150 grams butter
120 grams flour
1 litre milk
150 grams parmesan
250 grams scallops sliced
10 egg yolks
20 egg whites
¼ chopped chives
Garnish:
Rocket leaves
lemon juice
pine nuts

Method
• Melt the butter in a medium sized pot.
• Whisk in flour until the butter has absorbed the flour.
• Once it has been absorbed add the milk slowly, this will
make a béchamel.
• Take off heat and add to a bowl, fold in the Parmesan
cheese and chives.
• Add the egg yolks and scallops. Whisk the egg white to
a medium stiff peak, fold this into the béchamel.
• Place mixture into pre-greased moulds and fill to ¾
the height of the mould.
• Bake in oven for about 14 minutes at 200 deg celsius
• Garnish with rocket leaves dressed with lemon juice, sprinkle
with pine nuts
Notes:
•
If
you don't have enough ramekins you can use coffee cups and if
they are well greased you can still turn the soufflés over
to 'twice bake'.
•
These
soufflés can be made a day in advance. When you need them,
turn them over in the mould and reheat in an oven at 180-200 deg
c until golden brown.
•
For something extra - mix 100ml cream, 50g of parmesan, 1 egg
yolk and place a spoonful over each soufflé before reheating.
