Recipe: Pan fried John Dory with Onion Puree and Green Bean & Shallot Salad

Ingredients

Serves 4

4 John Dory fillets (approx 150 grams each, skin off)
2 brown onions
5 whole shallots
200 grams green beans
1 lemon
200 grams butter
Fresh dill
Salt
Pepper
Extra virgin Olive oil
Sea salt

Method

Puree
Dice the onions and cook them slowly in 150 grams butter. Let them go brown to release all the sugar until caramelised. Using a blender, puree them and season with salt and pepper.

Salad
Clean the green beans and blanch them in boiling water, slice shallots very fine and mix them with the green beans. Dress them using extra virgin olive oil and lemon juice, season.

Fish
Using a non-stick pan, fry the John Dory fillet using 50 grams of butter and olive oil. When nicely coloured, add lemon juice to give an extra twist.

To Serve
• Place onion puree on a plate, then some bean salad and finely the John Dory, sprinkle some sea salt on top
