What can I say about Tides? Well on the drive there, I though where on earth are my friends taking me, but after having experienced such a wonderful dining experience I can honestly say that it was well worth the effort and detour away from the CBD to get there.

The atmosphere was perfect, subdued light and right on the River, the meal was beautifully arranged and service was bar none. But the highlight of the evening was the prawns. I’m telling you, you've never had prawns like this before. I actually dreamt about the prawns that night, that’s how delicious they were. But of course if prawns are not your fancy there were a host of other amazing things to choose from.

I strongly recommend an evening (or afternoon) at Tides - it’s not just a restaurant, it’s a dining and culinary experience.

My only regret was that the weather wasn’t a little warmer so we could enjoy the outside balcony.

Recipe: Seared Tuna on a bed of honey and port shallots with char-grilled asparagus and a red wine reduction.

4 Portions

4 120g portions of Tuna
12 spears of asparagus
200ml red wine
pinch of sugar
4 shallots, finely diced
4 kipfler potatoes, cooked and peeled
100ml extra virgin olive oil
1 bunch of chives, finely chopped
2 tablespoon of honey
200ml Port

Method - Step 1
Reduce the red wine and sugar by three quarters and allow to cool
Step 2
Crush the kipfler potatoes with a fork, add the chopped chives and 1 tablespoon of olive oil.
Step 3
Rub the asparagus in a little oil, season with salt and pepper and char-grill until cooked.
Step 4
Season the Tuna on both sides and seal in a hot pan for 30 seconds on both sides.
Step 5
Slowly cook the chopped shallots in a little oil, add the honey and port and increase the heat slightly. Reduce the port until the shallots become sticky.

To Assemble - Step 1 Arrange the crushed kipfler potatoes on the plate, spoon the honey / port shallots over the potatoes. Lay 3 pieces of asparagus over the shallots and sit the tuna on top.
Step 2 Drizzle the red wine reduction around the plate and finish with a little olive oil.
